Over Christmas and the week following I got to make casseroles, bake a ham, whip up pies and cookies plus use my holiday dishes and platters. One of the new recipes that I tried was Snickers Pie. My family ate the pie in about 24 hours. Following dinner we had it for dessert then again a few hours later after some card games and Catch Phrase. We might have snacked on it before lunch the next day. Just maybe. Once you have a bite of this pie you will understand the need to eat it before you even get to lunch.

I adapted the recipe from Food.com and the best part about this recipe is it is SO easy. Here is what you need:
- 4 ounces cream cheese, softened
- 3/4 cup powdered sugar
- 1/4 cup creamy peanut butter (It says you can use crunchy but I am not a fan of crunchy peanut butter.)
- 1 1/2 regular sized Snickers candy bars, chopped (I used two full bars.)
- 8 ounces Cool Whip, thawed
- 1 chocolate cookie pie crust (You can also use graham cracker crust. I bought mine at the store but you can also make a quick crust with melted butter, fine graham crust or crushed pretzels.)
Directions:
1. In a large mixing bowl, beat cream cheese, sugar and peanut butter until creamy. (I used my Kitchen Aid but you can mix it in a large bowl too.)
2. Stir in chopped candy bars.
3. Gently fold in the Cool Whip just until mixed.
4. Pour into crust and refrigerate overnight. If you are making it a few hours before you serve it place it in the freezer.
5. Enjoy!

ReplyDeletejust made this, and it lends well to doubling. (considering that the cream cheese comes in an 8 oz. brick, I added two. tubs of cool whip, and x2 to the sugar and peanut butter) I used the Oreo brand pie shells, and when doubled, makes two pies perfectly! the folks at work are gonna freak out tomorrow! This is so yummy if you love peanut butter! I'm going to drizzle it w/ caramel ice cream topping, and hershey's chocolate syrup before serving, for that "oooh-ahhh" effect!
